If you're still using the app for accounting and tax, then you'll still have access to your Coconut statements and will be able to export them as normal directly from the app.
Simply head to your 'Transactions' tab > swipe to Coconut and then tap the Coconut card icon at the top of your screen. You'll notice this now states that your current account is closed, but you can still tap this to access your statements.
This will open up a new screen where you'll have the option to export your data as a PDF Statement or in CSV and OFX formats. You will also be able to select from one of the preset date ranges or select to use a custom date range and enter the dates you need.
